If you’ve always wanted to prepare some of your favorite dishes from Beach Walk Cafe at home, you’re in luck! The Henderson Park Inn offers weekly cooking classes every Wednesday with our very own Chef Greg Dupas. Hailing from Louisiana, Chef Greg is a master of Gulf Coast cuisine. These complimentary classes are open to anyone staying at our inn.
Below you will find anecdotes that Chef Greg shared during an especially memorable cooking class. We have also included one of Greg’s most popular recipes.
An Interview with Chef Greg Dupas
When did you start cooking?
“I started cooking early, at age 9. My mother told me to just go in the kitchen and look in the refrigerator or outside in the garden and just make something.”
What was your worst experience in the kitchen?
“My grandmother was making fried chicken on the stove and when she wasn’t looking, I grabbed a chicken leg out of the skillet, put it in my pocket and walked out the door so she wouldn’t see me. She saw me and immediately called me back in to help her with something. Ten years later, my mother saw a scar on my leg and asked how I got it and I laughed and told her I had slid into home base!”
Do you cook at home?
“Yes, I love to cook for my family and still look at what I have fresh in the fridge or garden. I grow figs, green, red, and yellow peppers and I love my tomatoes that grow upside down.”
What was your best early experience as a chef?
“At 17, I entered a chef competition in Louisiana and I was scared to death. It cost $100 a seat and I bought a ticket for my grandmother, who was my inspiration. I made Crawfish Stuffing in Beef Tenderloin, put it on fried eggplant, topped it with hollandaise, and I won a gold medal!”
Would you ever want to be on TV?
“No, I’m kind of glued to this place…Would rather be with ya’ll! I could win the Powerball tonight for $120 Million; I would still come to work tomorrow. I’m happy here and love this place!!”
Chef Greg’s Recipe for Shrimp or Crawfish Etouffee
1/2 lb. butter (2 sticks)
Melt in stock pot.
1 cup diced yellow onions
1 cup diced bell pepper
3 Tbsps. chopped garlic
Saute vegetables until soft.
Add 1 (12 oz.) can of crushed tomatoes and 2 bay leaves. Stir in remaining ingredients in the order below and cook over medium heat until heated through.
1 cup flour
2 (10 oz.) cans cream of celery soup and 2 (10 oz.) cans cream of mushroom soup
4 cups chicken stock and 1 tsp. kitchen bouquet spice
2 lbs. crawfish or shrimp
1 cup chopped green onions
Add all of the ingredients in order above and stir well. Simmer for 15 minutes. Add salt and white pepper to taste.
For more spice, add chopped jalapenos or a little cayenne pepper.
Serve over hot cooked grits and enjoy!
